Tenejapa, Chiapas: Highland Coffee Excellence
Nestled in Chiapas's highlands, Tenejapa is home to the Tzotzil Maya people who cultivate exceptional specialty coffee. At elevations between 1,000-1,350 meters, smallholder farmers leverage volcanic soils and an ideal climate to produce organic-certified arabica varieties, including Caturra, Costa Rica, Marsellesa, and Typica. The washed processing method features overnight fermentation with mechanical drying and raised beds. This indigenous community combines deep cultural heritage with sustainable coffee production, creating distinctive beans that reflect both traditional practices and premium quality standards in one of Mexico's most celebrated coffee-growing regions.
